Sinful Sunday Breakfast

This is a big one. This is for those days when you wake up, late for Church and you decide to stay in for Bedside Baptist. Or maybe Church was never in your sights but last night’s partying has your stomach begging for mercy. Here is a breakfast that will force you to wake up and focus as you make it, and have your stomach doing happy dances as you eat it.

I made this on a Saturday for The Beau because he was so sweet to me. 🙂

I hope you don’t have a hard time following my “Preparation” section. Overall I think you can work through it and do your own thing, but this is just a blueprint for making magic in the kitchen!

Sinful Sunday Breakfast
Prep Time: 40 mins Cook Time: 5-20 mins

What you’ll need (for 2):

For Sausage (you could use pre-packaged if you’d like)

  • 1 lb Ground Turkey
  • 1 Tbs butter
  • 1 Green Apple- Diced
  • 1 Small Onion- Diced
  • 1 Tbs Fennel Seeds
  • 1 Tsp All Spice
  • 2 Tsp Poultry Seasoning
  • Salt & Pepper
  • 1 Tsp Olive Oil

For Pancakes or waffles:

  • 1 Box pancake mix (Typically requires you to add some amount of water)
  • 2 cups fresh berries or smashed bananas or peanut butter. Whatever you want to make them jazzy. If using Peanut butter, you’ll also need 1/2 C milk.

For Eggs:

  • 6 eggs
  • 1/4 C Water
  • 3/4 C Spinach
  • 1 C Shredded Cheese
  • Seasoned Salt & Pepper

For Bacon:

  • 6-8 Slices of Turkey Bacon
  • Pepper
  • Maple Syrup

For Biscuits:

  • 1 package Pillsbury Golden Flaky Butter Biscuits

Preparation:

Preheat oven according to the Biscuit package directions.

Start with preparing the sausage. You can freeze the sausages that you don’t want to make. In a skillet melt the butter and saute the apple and the onion until they are soft and translucent, about 5 mins. Then add the fennel seeds and salt & pepper. Cook for a few minutes longer. Set aside to let cool.

In a mixing bowl, break apart the ground turkey and season with the allspice and poultry seasoning. Add in the apple and onion mixture and fold together. Drizzle the olive oil over the mixture. Form into the shape of patties.

Spray the skillet with cooking spray and add the patties. Cook for about 4-5 minutes on each side to your desired doneness. Some people like them extra browned.

You can get the bacon going at the same time now too. I always use a split pan for this.

When using non-stick pans you don’t have to spray with bacon, it produces enough grease. Add the bacon to the skillet and season with black pepper. Keep an eye out as to how crispy you like your bacon. Flip to cook thoroughly, and towards the end of your cooking add a small bit of maple syrup for the sweet & spicy maple taste.

Now for the pancakes. Prepare the batter according to package directions (or follow waffle directions). If you would like to add berries, make sure the juices are drained off and add them to the batter. Carefully fold the berries in because you don’t want to break them up or cause the juices to run into the batter. You could also add mashed bananas. If you want to make peanut butter & jelly pancakes, melt 1 C of peanut butter with 1/2 C of milk in a microwavable bowl and stir until smooth. Add to the batter.

Once the batter is ready, cook in a deep or flat skillet. Make sure it is well sprayed and good and hot. Use a measuring cup so the pancakes are even in size.

The first side is done when bubbles begin popping up in the top of the batter. Only flip once! Flip the pancakes and allow the other side to brown.

When finished set on a plate and cover to keep warm. Top with maple syrup or my berry syrup.

I always cook my eggs last because they cook so fast and taste horrible when cold. At this time I would also add my biscuits to the oven on a non-stick cookie sheet. Set the timer so you don’t forget!

Break eggs one by one into a small bowl and then add to a larger bowl. You want to make sure you don’t get any shell in the dish or any bad eggs. Add the 1/4 C of water and seasoned salt & pepper. Stir quickly with a whisk or a fork. Once combined, add your spinach and cheese. Stir again carefully.

In a hot skillet sprayed with cooking spray add the egg mixture. Using a spatula gently push the eggs around making sure they cook thoroughly. Making eggs is easy, but people mess them up all the time. Don’t cook too fast, don’t chop around too much. Just push the egg mixture around allowing it to cook evenly. The cheese will be melting and all that good stuff, that’s perfect. Remove from the heat right before they are done. They will continue to cook on their own.

By this point, everything will be coming to a finish. I always finish my pancakes before I start on my eggs because that’s too much to be focusing on at once. I set them aside and if I’m not making biscuits I let them sit in a low oven. If I am, then I pop them in the microwave to warm them up again.

Drain sausage and bacon on a plate covered with a paper towel.

Take the biscuits out and if you’d like brush with a little bit of honey.

Plate and enjoy! Add some fruit as a garnish and you’re good to go!
