Nik Nak’s Sangria

It’s summertime and who doesn’t love a great, refreshing, spirit-filled drink? I know I certainly do. Not everyone is, can be, or even wants to be a bartender, but I have a drink that you can make yourself and keep a nice handy stash ready the entire summer.

I hit up my Fairy Godmother Nikki for her Sangria recipe because she’s my favorite and her Sangria is world famous. It’s a bit intense, but soooo worth it. And in my mind, it’s a bit healthy too! It has fruit in it!

Nik Nak’s Sangria
Prep Time: 30 mins dicing. Cook Time: 2 hrs-overnight in refrigerator.

What you’ll need:

  • 1 big btl (1.5L) of red wine. Don’t get Fancy huh. When adding flavors to wine there’s no need to buy expensive.
  • Fruit – here is your opportunity to be CREATIVE!!! Go with whatever is in season b.k.a. CHEAP. FRESH fruit is the key – no canned, pre-packaged, etc
  • Pineapple – you won’t use the whole thing, but you can make a pretty garnish with the slices
  • Berries – strawberries, raspberries, blackberries, blueberries
  • Grapes – Red Seedless preferably, but your choice
  • Red Delicious apple, Bartlett pear – you can use another variety of each – go with whatever you want
  • Mango, kiwi, or any other tropical fruit
  • 1 Cup Sugar
  • 1-1  ½ Cup of Rum
  • Orange Juice to taste


Cut pineapple in half – place one half aside. Skin and core the other half, then cut in half so you have 2 quarters. Slice quarters into 1/4 inch thick pieces

Cut tops of strawberries and cut them into bite-sized pieces. Depending on the size of the strawberries will depend on how many times you cut.

All of the fruit should be bite-sized, that’s the fun of drinking (and eating) Sangria!

Leave the skin on apples and pears while skinning the kiwi and mango, cut into bite-sized pieces.

Now the important part! Put all cut fruit into a Ziploc bag and pour 1 c. of sugar and 1 – 1 1/2 c rum over fruit. You want enough sugar to coat all the fruit and enough rum to cover the top of the fruit. Let it sit and marinate in the refrigerator at least 2 hours up to overnight.

Once done marinating, portion half of fruit into a pitcher. If you are using a small pitcher make two batches! Pour wine over fruit and stir. When ready to serve top each glass with OJ and mix just a bit and garnish with the remaining Pineapple and Fruit!

*Sidenote- If you want the wine to taste more of the spirits – don’t use apples and pears. If you do use apples and pears *don’t eat them* – they soak up all the rum when marinating and taste like a crunchy shot of rum. (Unless of course you like the taste of crunchy rum shots LOL!)
